Salad:

5 C Watermelon, cubed and seeded
6 Oz Romaine Lettuce, chopped
1/2 C Blue Cheese, crumbled
3/4 C Pecans or Walnuts

Dressing:

1/4 C Rice Wine Vinegar
1/4 C Plain Pepper Jelly
1 T Lime Juice, fresh
1 T Onion, grated
1 t Salt
1/4 t Pepper
1/4 C Vegetable Oil

In a small bowl, combine rice wine vinegar, pepper jelly, lime juice, onion, salt and pepper. Whisk until jelly is dissolved. Slowly add oil, whisking until it combines. Set aside.

Toss Watermelon, Lettuce, Blue Cheese, and Pecans. Dress with Vinaigrette.
